Tomato fondue brings a taste of the South to the caquelon. Sun-dried tomatoes, basil, and oregano give the melted cheese a fruity and herbaceous aroma, while Kampot white pepper and mace add a subtle heat. I’ve been using this mixture exactly as is in my fondue villages for over ten years.

Usage:

• Cheese fondue
• Tomato soup and sugo
• Focaccia and pizza dough
• Roasted vegetables and oven-roasted eggplant
• Mozzarella or burrata
